Hello Weekend

I’m SO glad the weekend is almost here again! Last weekend we were busy with our birthing class at the hospital. It lasted for six hours on both Saturday and Sunday, so we didn’t have much time to do anything else (except nap afterwards because naps are incredible).

But this weekend we have nothing big planned! The only plans we have are to sleep in, maybe take care of some shopping, do a little cleaning around here, and hopefully make a pool trip.

We had two doctor’s appointments this past week and baby seems to be doing great! She’s measuring right where she should be and is moving around a TON. Lots of kicks. I feel huge already and I can’t believe we still have ten weeks left. I can’t even imagine how much bigger I’m going to get!

Tomato Basil Pasta with Parmesan

I was looking through the recipes we’ve shared here over the past year, and I cannot believe we hadn’t shared this one for tomato basil pasta yet. It’s such a staple in our dinner repertoire (and I’m making it again tonight). It hits 3 points:

  1. So easy to make
  2. Inexpensive!
  3. Perfect in summer since you don’t need the oven

I love the cherry tomatoes that are out this time of year. And this is the perfect dish to use them in! They get a little blistered and yummy. And topping off the pasta with some freshly shaved parmesan cheese makes it all even more delicious.

Hello Weekend

Hello weekend! And hello third trimester of pregnancy. Apparently hitting this milestone means that all of a sudden the insane tiredness has returned (and night insomnia and weird dreams). So I’m looking forward to taking a bunch of naps this weekend. I’m not sure what else we’ll be doing. Maybe heading to the pool again as a way to stay cool in this Texas heat.

And the fourth of July is coming up next week! Which means a day of fun (and probably more naps). I love summer holidays!

  • Most of Josh’s family lives out in California, and I’m hoping we’ll be able to take our daughter out there for a trip next summer so she can see the Pacific Ocean! When we go to California, I always love to swing by San Francisco for a few days. Here’s some vintage photos of San Francisco in the 40s and 50s.  
  • It’s getting hotter and hotter. Time to make something cooling. A pie where you don’t have to turn on your oven. This four ingredient lemonade pie is one of my favorites, and always brings me back to my childhood when my grandma used to make it all the time.

Peach Iced Tea

Peach Iced Tea from Food Banjo

Make me all the cold drinks this summer. A while back, I posted a recipe for blackberry iced tea. But now, peaches are everywhere and delicious, so I had to make a version for peach iced tea!

For some reason, peach iced tea makes me think of Santa Fe. When I was in high school, I wound up stopping in Santa Fe for lunch on the way back from Colorado. I don’t remember much else about the stopover other than I ordered some iced tea along with my lunch, and it wound up being a peached iced tea. It was so delicious, and I’ve never been anywhere since that had this.

Hello Weekend

I’ve been taking a staycation all week, and it’s actually been quite busy. We started the process of rearranging our house to get ready for the baby. We removed all the furniture from the bedrooms and cleaned the blinds, windows, baseboards, and shampooed the carpets. (Definitely makes me wish we had wood floors!) But now things are a lot cleaner, and we’re moving all the furniture back in. It’s been quite the process.

We’ve also enjoyed leisurely mornings, walks with the dog, meeting friends for happy hour, and today I think we’re heading to the pool. Sad that the vacation is coming to an end, but happy to have had this week to catch up on some much needed sleep because there were LOTS of naps.

Lately I’ve been eating all the summer fruit. It seems like every time Josh or I go to the store, we pick up some deliciously ripe fruit. One day he came home with my favorite fruit.. raspberries! We ate some raw, but I also saw this as an opportunity to bake them into a raspberry dutch baby pancake.
