Tropical Smoothie with Pineapple

As we’re taking care of our new baby over the next few months, get ready for some easy recipes. Here is one that could NOT be easier. A tropical smoothie. Throw ingredients into a blender, blend, pour into glasses, enjoy. Luckily, it’s also delicious.

For our baby shower a few months ago, we had pineapples for decor. I loved the idea of this, because I knew after the shower, we could cut them up and freeze them. And we did! Josh made a pineapple sorbet (yum!) with one of the pineapples, but the others are in the freezer, just waiting for smoothie-making days.

This smoothie lets you have those tropical summer flavors well into fall and winter. I mean, here in Austin it’s still crazy-hot. But technically, now it’s fall. Soon we won’t be able to find those summer berries and fruits at the store or markets. Or at least not at their peak. Which is why… buy them now while you still can and freeze them for smoothies! That way you can enjoy the flavors of summer even in fall and winter.

I love this combination of banana, pineapple, and strawberry in this smoothie. I know once it DOES finally get cold here, it will be nice to have these flavors to remember summer by.

This is a truly mouth-watering smoothie recipe which I can easily start the day with, Aimee! Can I use coconut instead of almond milk?

Yes! Coconut milk would be delicious too.
