Cheesy Tortellini Bake

  • 1 28 oz can whole, peeled tomatoes
  • 1 yellow or white onion
  • 3 Tbsp butter
  • 1 tsp dried oregano
  • salt
  • pepper
  • 10 oz tortellini
  • 4 oz fresh mozzarella cheese
  • Fresh basil, for garnish
  1. Take the can of tomatoes and blend in a blender.
  2. Add the tomatoes to a large pot and place on the stove.
  3. Take the onion, cut in half and peel. Add both halves to the pot. Add the butter to the pot.
  4. Heat the mixture to boiling, stir the butter to incorporate, then reduce the heat to medium-low.
  5. Stir in the oregano and continue cooking over medium-low heat for 1 hour, uncovered. Remove the onion. Add salt and pepper to taste.
  6. Cook the tortellini according to the package directions.
  7. To layer the dish, first add sauce to cover the bottom of an 8½ x 11 casserole dish. Add the tortellini on top, and spread to make sure it is in an even layer. Then add more of the sauce on top to coat the tortellini. Tear the mozzarella cheese and place over the top.
  8. Broil until the cheese is melted and bubbly.
  9. Remove from oven and top with fresh basil if desired.
