Equipment

Ingredients

  • 1 pound baby potatoes
  • ¾ teaspoon salt
  • ¼ cup olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder

Instructions

  • Scrub the potatoes, then add to a large pot. Cover the potatoes with water, add ½ teaspoon of salt, and bring to a boil. Once water is boiling, cook for 25 minutes, or until tender when pierced with a fork.
  • Preheat the air fryer for 5 minutes at 400 degrees F.
  • Remove potatoes from water and place on a baking sheet or a large cutting board.
  • Smash the potatoes gently with a fork or the bottom of a drinking glass.
  • In a small bowl, mix together olive oil, smoked paprika, garlic powder, and ¼ teaspoon of salt.
  • Brush the potatoes with the oil mixture, then flip the potatoes and brush the other side.
  • Add potatoes to the air fryer basket in a single layer (you may need to do multiple batches, depending on your air fryer). Air fry for 15 minutes at 400 degrees F.
  • Remove from air fryer and serve as desired.

Notes

  • I boiled my potatoes first in a large pot with water, but you can also air fry them until fork tender if you prefer. Cook time may vary based on the size of your potatoes.
  • All air fryers cook differently. Adjust cooking times as needed.
  • If you're using both red and gold potatoes, like I did, note that they may not soften at the same time. I find that red potatoes take a a little longer to boil and get soft.
