Bang Bang Potatoes

Bang bang potatoes are crisped up in the oven and then topped with a delicious spicy sweet bang bang sauce.

Ingredients

  • 1.5 pounds yellow potatoes like yukon gold
  • 2 Tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • green onions optional

Homemade Bang Bang Sauce

  • cup mayonnaise
  • 3 Tablespoons sweet chili sauce
  • 1 teaspoon sriracha
  • 1 Tablespoon lemon juice

Instructions

  • Preheat oven to 400 degrees F.
  • Wash and dry potatoes. Dice into 1 inch cubes.
  • To a large bowl add olive oil, paprika, garlic powder, and salt. Stir to combine. Add potatoes to the bowl and stir until potatoes are coated.
  • Add potatoes to a foil-lined baking sheet. Place in the oven and bake for 40-50 minutes, or until tender when pierced with a fork.
  • While potatoes cook, make the bang bang sauce. Add mayonnaise, chili sauce, sriracha, and lemon juice to a bowl. Stir to combine.
  • Once potatoes are done cooking, plate and then top with bang bang sauce drizzled on top (you may have leftover sauce). Add any additional toppings and enjoy.

Notes

  • Ovens may cook differently. Pierce a few potatoes with a fork to ensure they are tender on the inside before plating.
  • If you have leftover bang bang sauce, it can be stored in the refrigerator for up to 7 days.
