Bang Bang Potatoes

- 1.5 pounds yellow potatoes like yukon gold
- 2 Tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- green onions optional
Homemade Bang Bang Sauce
- ⅓ cup mayonnaise
- 3 Tablespoons sweet chili sauce
- 1 teaspoon sriracha
- 1 Tablespoon lemon juice
Preheat oven to 400 degrees F.
Wash and dry potatoes. Dice into 1 inch cubes.
To a large bowl add olive oil, paprika, garlic powder, and salt. Stir to combine. Add potatoes to the bowl and stir until potatoes are coated.
Add potatoes to a foil-lined baking sheet. Place in the oven and bake for 40-50 minutes, or until tender when pierced with a fork.
While potatoes cook, make the bang bang sauce. Add mayonnaise, chili sauce, sriracha, and lemon juice to a bowl. Stir to combine.
Once potatoes are done cooking, plate and then top with bang bang sauce drizzled on top (you may have leftover sauce). Add any additional toppings and enjoy.
- Ovens may cook differently. Pierce a few potatoes with a fork to ensure they are tender on the inside before plating.
- If you have leftover bang bang sauce, it can be stored in the refrigerator for up to 7 days.
