Ingredients

  • 1 lb yellow potatoes Yukon gold
  • 1 Tablespoon olive oil
  • 1 ½ teaspoons dried sumac
  • ½ teaspoon salt

Instructions

  • Preheat oven to 400 degrees F.
  • Wash and dry potatoes. Cut into 1 inch pieces and place in a large bowl.
  • Add olive oil, sumac, and salt to the bowl. Toss until combined.
  • Spread out potatoes on a baking sheet. Bake for 20 minutes, then toss and cook for another 15-20 minutes until potatoes are roasted and tender when pierced with a fork.

Notes

  • Potatoes may take a little longer or shorter to cook based on your oven and how large you cut the potatoes. Make sure to pierce them with a fork to test for doneness before serving.
  • If you want to add more seasonings, add some harissa powder, paprika, or garlic powder to increase the flavor.
