- 1 pound baby potatoes
- 3 Tablespoons pesto
- 1 Tablespoon olive oil
- ½ teaspoon salt
Preheat air fryer for 5 minutes at 400 degrees F.
In a large bowl, add olive oil, salt, and 2 tablespoons pesto. Stir to combine.
Wash and dry potatoes. Dice into 1 inch cubes. Add potatoes to pesto mixture and then stir until coated.
Add potatoes to air fryer basket. Cook at 400 degrees F for 14-17 minutes, shaking halfway through cooking.
Plate, then top with the additional 1 Tablespoon of pesto.
- All air fryers cook differently. Adjust times as needed! Also, red potatoes may take slightly longer to cook than yellow potatoes.
- The addition of pesto at the end makes the dish. It gives that extra pesto flavor that the potatoes need.
- This recipe can serve 2-4, depending on what other items you're serving with the potatoes.
