Apple and Bacon Sandwich

Apple and bacon sandwiches are perfect for an easy lunch. These lunchtime sandwiches are made even more delicious with fresh arugula and sharp cheddar.

Ingredients

  • 2 slices bread like sourdough or multigrain
  • 2 slices cooked bacon halved
  • 2 slices sharp cheddar cheese like English Cheddar or Dubliner Irish
  • arugula handful
  • ½ apple sliced
  • 2 teaspoon dijon mustard

Instructions

  • Take the bread and put a handful of arugula on one of the slices. Add the apple slices, then cheddar slices, then bacon slides.
  • Spread the dijon mustard on the other slice and place that on top.
  • Serve whole, or sliced in half.
