Garlic French Fries with Parsley

- 2 russet potatoes
- 2 cloves garlic minced
- 2 tablespoon fresh parsley chopped
- 3 tablespoon olive oil
- salt
- pepper
Preheat the oven to 475 degrees F.
Take the russet potatoes and wash and scrub them. Cut lengthwise into ½ inch by ½ inch pieces.
Toss the cut fries in a large bowl with olive oil and a sprinkling of salt and pepper.
Take a baking sheet and line with foil. Spread the potatoes out in a single layer onto the foil.
Cook the potatoes in the oven for 20 minutes. Remove, then flip the fries.
Turn the oven up to 525 degrees F. Return the fries to the oven and cook for another 5 minutes, or until cooked through and tender.
Place the fries in a bowl and immediately toss with the minced garlic and chopped parsley (and extra olive oil, if desired). Season to taste with salt and pepper.
Savory Dipping Ketchup
Ingredients:
- ½ cup ketchup
- 2 teaspoon ground cumin
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
Instructions:
Mix all ingredients in a bowl and refrigerate until needed.
