Equipment

Ingredients

  • 8 oz brussels sprouts
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • cup walnuts roughly chopped
  • 1 Tablespoon butter
  • ½ cup apple cider vinegar
  • ¼ cup maple syrup
  • ½ teaspoon red pepper flakes

Instructions

  • Preheat your air fryer for 5 minutes at 400 degrees F.
  • While air fryer is preheating, trim your brussels sprouts and cut in half lengthwise (from stem to top).
  • Add the brussels sprouts to a medium bowl and toss with olive oil, salt and pepper. Place in your air fryer and cook at 370 degrees F for 10-15 minutes, tossing every 5 minutes and checking for doneness at the 10 minute mark.
  • While brussels sprouts are cooking, add the butter, apple cider vinegar, and maple syrup to a small skillet over medium-low heat, stirring frequently. Cook until butter is melted, then add your walnuts and cook for another 2-3 minutes until mixture is slightly thickened, but watch carefully to make sure mixture doesn't split.
  • Take your brussels sprouts and then top with the maple/vinegar glaze and walnuts. Add crushed red pepper flakes on top if desired.

Notes

Cooking tips:
  • For larger brussels sprouts, cut in quarters instead of halves.
  • For more tender brussels sprouts, soak in water for 10 minutes beforehand.
  • All air fryers cook differently. Make sure to check for doneness early and often.
  • If you don't want the outer leaves of your sprouts to get done so much and become "brussels sprouts chips," then remove them and make sure you don't have any loose leaves on your sprouts. I personally like the outer leaves.
