Oven Roasted Red Cabbage
Roasted Red Cabbage is the perfect easy side dish you didn't realize you needed. It's surprisingly delicious and is so gorgeous with it's purple color. It gets lightly caramelized in the oven for a slightly sweet flavor.

- 3 cups red cabbage diced
- 1 ½ tablespoons olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Preheat your oven to 425 degrees F.
Chop the red cabbage into 1 inch pieces until you have 3 cups of diced cabbage.
Spread the red cabbage on a rimmed baking sheet. Drizzle with olive oil, and add the salt and pepper. Toss to combine, and then spread out onto the sheet.
Cook for 10 minutes in the oven, then toss, then cook for another 8-10 minutes.
Season with additional salt and pepper to taste.
