Ingredients

  • 2 eggs
  • ½ teaspoon harissa plus more for serving
  • 1 Tablespoon butter
  • 1 ounce smoked salmon torn into small pieces
  • fresh herbs

Instructions

  • Crack two eggs into a bowl. Add the harissa and scramble together.
  • In a small skillet, add your butter and let melt over medium-low heat.
  • Add the egg and harissa mixture to the pan. When eggs start to cook, add the smoked salmon. Cook, stirring frequently, until eggs reach desired doneness.
  • Plate, then drizzle with any additional harissa, and top with fresh herbs.

  • This recipe uses the jarred form of harissa, not the ground spice.
  • All stoves cook differently, and it can also depend on what type of pan you are using. Make sure to adjust cooking times as needed so that your eggs are properly cooked to your liking.
  • This is a recipe that is so easy to customize! Want a little more smoked salmon? Add more smoked salmon. Want it a little spicier? Add more harissa.
  • Note - if using olive oil, use 2 teaspoons instead of 1 tablespoon.
