Peri Peri Rice
Peri peri rice is an easy way to make rice something special. This rice is deliciously spicy and is perfect served alongside chicken, or included in a rice bowl or as part of a wrap.

- 2 teaspoon olive oil
- 2 tablespoon onions diced
- 2 cups chicken broth
- 2 tablespoon Peri-peri sauce medium spice
- 1 cup rice
Heat the olive oil in a medium pot over medium heat.
Add onions, and cook for 2-3 minutes. Stir frequently until onions are translucent and starting to brown.
Add the chicken stock and peri-peri sauce and bring to a boil.
Add the rice and stir to combine. Add the lid, reduce heat to low, and cook for 20 minutes (or according to package directions).
Turn off the heat and let stand for 5 minutes. Remove the lid, fluff the rice with a fork, and serve.
Customize it!
- Instead of chicken broth, you can use vegetable broth or water.
- Add in peas. If adding frozen peas, add after the rice is cooked. Stirring the hot rice with the peas should cook the peas perfectly. Replace the lid after stirring and let sit for several minutes before serving.
- Add in cooked peppers. I would cook the peppers at the same time as the onions.
- Serve topped with shrimp or chicken (and maybe your favorite vegetable).
- Use the peri-peri rice as part of a wrap with chicken or other protein and lettuce.
