Stick a cookie sheet in the freezer for at least 1 hour before making the yogurt bites.
Wash and dry the blueberries.
Take a cookie sheet and place a sheet of wax or parchment paper over it.
Take a few spoonfuls of Greek yogurt and put it into a bowl or a cup.
Take each blueberry and skewer it with a toothpick. Dip each blueberry completely into the yogurt, then place on the wax/parchment paper.
Keep going until you run out of blueberries or yogurt!
Place the cookie sheet in the freezer for 1-2 hours until the yogurt is frozen and set. Peel each frozen blueberry away from the wax/parchment paper and place into a freezer-safe bag or container. Return to the freezer until ready to enjoy.
Notes
Recipe tips:First of all, make sure you have room in your freezer for a sheet pan to live while these freeze up! It's best if you can lay the sheet pan flat so that the blueberries don't slide around while they are setting. We also love putting our baking sheet in our freezer for a few hours ahead of time, so it's already cold when we place the blueberries on it. That helps to keep the yogurt from melting right away when putting the covered blueberries onto it.
