These Melting Sweet Potatoes are seasoned with garlic and sage for a delicious side dish. The potatoes get roasted in the oven at a high heat until meltingly tender.
In a large microwave-safe bowl, melt the butter in the microwave. Add chopped sage leaves, garlic powder, and cayenne (optional) and stir to combine.
Add the sweet potato rounds to the bowl and toss until sweet potato slices are covered in butter.
Add sweet potato in a single layer to a metal baking dish. Pour any remaining butter over the top of the potatoes. Roast for 20 minutes, then flip and roast for another 20 minutes.
Add vegetable broth to the pan and cook for another 15 minutes.
Remove from the oven and serve as desired.
Notes
Because this is a high-heat recipe, I do not recommend a glass baking dish. This works best in a metal dish to ensure safety. I like using a metal cake pan, but you can also use a sheet pan, just make sure it has sides, as you'll add liquid to the pan during cooking.
Cooking time may depend on the size of your sweet potatoes. Adjust as needed. The finished dish should produce sweet potatoes that are tender and can easily be cut with a fork. If you cut them into 1 inch rounds, they should cook perfectly using the recipe timing.
If you do not wish to melt your butter in the microwave, you can instead melt in a pot or skillet using the stove.
Do not skip the step on cooking with the vegetable broth! It adds so much flavor and tenderness to the sweet potatoes.
