Slice the zucchini into rounds ¼ inch thick. Place slices in a medium bowl.
Grate ⅓ cup Parmesan cheese.
Add olive oil, salt, and harissa powder to the bowl. Toss to combine, making sure all zucchini is coated with the harissa and olive oil.
Place zucchini slices on a baking sheet in a single layer. Add a bit of the grated parmesan cheese to the top of each zucchini slice.
Bake for 8-10 minutes, until zucchini is tender and roasted.
Switch oven to broiler. Broil for 3-4 minutes, watching closely until cheese is crispy and browned.
Remove from the oven ad plate. Top with more freshly grated Parmesan if desired.
Notes
All ovens cook differently, check to make sure your zucchini is tender before removing from the oven. When using your broiler, also keep a close eye on your zucchini.
Freshly grated parmesan cheese works best with this recipe. I highly recommend keeping a wedge of parmesan cheese in your refrigerator. I love using a microplane to grate the cheese.
If you want to slightly amp up the spice level, add an additional ¼ teaspoon harissa to the zucchini.
If you slice your zucchini a little thinner, it will still work, but won't be as sturdy as if you slice it thicker. I have found that around ¼ inch works best.
