Fluffy Scrambled Eggs with Chives

This recipe for fluffy scrambled eggs with chives is so easy you could make it everyday. Serve it with a sprinkling of freshly grated Parmesan cheese on top and toast on the side to make it even more delicious!

Ingredients

  • 1 tablespoon butter
  • 2 eggs
  • 2 chives
  • Parmesan cheese freshly grated
  • salt
  • pepper

Instructions

  • Crack the eggs into a bowl.
  • In a nonstick pan, heat 1 tablespoon butter over medium heat.
  • While the butter melts, whisk your eggs with a fork for 1 minute.
  • Add the eggs to the pan and let cook for 45 seconds to 1 minute while the eggs start cooking through. Once you see at the edge of the pan that the eggs are cooking through, start stirring them with a rubber/silicone spatula. Stir until eggs are cooked, but not browned.
  • Plate, then grate a little Parmesan cheese over the top (if desired). Using kitchen scissors, cut small pieces of chives over the top of the eggs. Sprinkle a little salt and pepper over the top, if desired.
  • Serve and enjoy!

Notes

Alternately, instead of using kitchen scissors to slice chives over the eggs, you can simply use a knife to cut them, then sprinkle over the top of your eggs.
