Fluffy Scrambled Eggs with Chives

This recipe for fluffy scrambled eggs with chives is so easy you could make it everyday. Serve it with a sprinkling of freshly grated Parmesan cheese on top and toast on the side to make it even more delicious!

I love easy breakfasts. And protein-rich breakfasts that will help keep me full for hours. These fluffy scrambled eggs check both boxes. And they have chives, which are a small herb that packs a punch! They are made without milk, which is an added bonus! The eggs get all fluffy and delicious on their own, if you cook them right!

We've typically heard of chives paired with sour cream. And sure, they're good like that too. But they are amazing on fluffy scrambled eggs.

I like to serve these fluffy scrambled eggs with a side of toast, but you can serve with fresh fruit, a salad, some bacon, or whatever strikes your fancy. So many things pair well with these scrambled eggs with chives that you might find yourself making them several times a week. They're that easy to make and that delicious.

Ingredients:

  • Butter
  • Eggs
  • Parmesan cheese
  • Chives

Where to get chives?

Chives can easily be found in any grocery store in the section where you can find other refrigerated herbs. Typically this is in the refrigerated produce section. Chives are also so easy to grow! The chives I used were freshly snipped from my garden.

If you do wind up buying some from the grocery store and are looking for more ways to use chives, they are also delicious with baked potatoes, or over a lot of roasted veggies. They also make a great garnish on soups, like this Instant Pot Potato and Leek Soup.

Where do you find freshly grated Parmesan cheese?

Around here, we love freshly grated Parmesan cheese and aren't so interested in the pre-grated or pre-shredded ones. We typically buy a big wedge of Parmesan cheese and grate it whenever needed. It tends to actually be more cost-effective for us than buying the pre-grated types. Plus, it's more delicious! We get our Parmesan at Costco most of the time, but you can find wedges at at lot of grocery stores these days. Check the deli section!

How do you make fluffy eggs?

To make fluffy eggs without milk or cream, you'll basically want to do two things.

First, make sure you whip your eggs really well to activate all the proteins and start to get that white a bit fluffy. This can simply be done with a fork. Just whisk your eggs for around 60 seconds with your fork.

Second, while cooking, you'll want to let cook and start heating through BEFORE stirring. This allows the eggs to form larger curds in a sense. If you start stirring your eggs right away, they will form smaller curds and a more creamy texture instead of a fluffy texture.

Once your eggs start to cook and heat through and you can see they are cooking along the side of the pan, then you can start stirring.

How to make the dish:

So to start, crack your eggs into a bowl.

Whisk while you start melting your butter in a pan.

Spoiler alert -- this is what chives look like. Thinner green onions.

Add your eggs to the pan and cook for a bit until you start seeing them firm up around the edges.

Then, take spatula and stir them around. Stir and cook until cooked through, but not browned.

Plate, then grate some Parmesan cheese over the top. Add cut chives, salt, pepper, and enjoy!

Fluffy Scrambled Eggs with Chives

This recipe for fluffy scrambled eggs with chives is so easy you could make it everyday. Serve it with a sprinkling of freshly grated Parmesan cheese on top and toast on the side to make it even more delicious!

Ingredients

  • 1 Tbsp butter
  • 2 eggs
  • 2 chives
  • Parmesan cheese freshly grated
  • salt
  • pepper

Instructions

  • Crack the eggs into a bowl.
  • In a nonstick pan, heat 1 Tbsp butter over medium heat.
  • While the butter melts, whisk your eggs with a fork for 1 minute.
  • Add the eggs to the pan and let cook for 45 seconds to 1 minute while the eggs start cooking through. Once you see at the edge of the pan that the eggs are cooking through, start stirring them with a rubber/silicone spatula. Stir until eggs are cooked, but not browned.
  • Plate, then grate a little Parmesan cheese over the top (if desired). Using kitchen scissors, cut small pieces of chives over the top of the eggs. Sprinkle a little salt and pepper over the top, if desired.
  • Serve and enjoy!

Notes

Alternately, instead of using kitchen scissors to slice chives over the eggs, you can simply use a knife to cut them, then sprinkle over the top of your eggs.
