Roasted Ras el Hanout Carrots

Ras el Hanout carrots are roasted carrots inspired by flavors from Morocco. These Moroccan-inspired roasted carrots are tender, flavorful, and so easy to make.

Ingredients

  • 5 carrots
  • 1 Tablespoon olive oil
  • ¾ teaspoon ras el hanout
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 400 degrees F.
  • Peel carrots and slice into ½ inch pieces.
  • Add carrots to a medium bowl, then add olive oil, ras el hanout, and salt. Toss to combine until carrots are coated.
  • Spread out on a baking sheet. Bake for 15 minutes, toss, then roast another 10-15 minutes until tender.
  • Remove from oven and plate as desired.

Notes

  • Don't overcrowd the carrots on the baking sheet, otherwise they will steam and not roast.
  • Cooking time may depend on how large you slice the carrots.
  • Either orange carrots or heirloom carrots (aka rainbow carrots) can be used for this recipe.
 
These carrots are delicious served as is, topped with some fresh parsley, cilantro, or mint leaves. Lemon zest would also add a bright flavor to the roasted carrots. To add a little bit of additional flavor, serve with goat cheese crumbles or feta crumbles.
