Ras el Hanout carrots are roasted carrots inspired by flavors from Morocco. These Moroccan-inspired carrots are tender, flavorful, and easy to make. They make the perfect side dish when served with chicken, fish, lamb, or roasted chickpeas.

I love roasting carrots in the oven. They just get caramelized to perfection. And these Moroccan carrots with ras el hanout seasoning have become one of my favorites. I often serve them with chicken or fish, or add to grain bowls.

How to make ras el hanout carrots
Preheat oven to 400 degrees F. Peel and cut carrots into 1 inch pieces. Place into a medium bowl. Add the olive oil, spices, and salt. Toss carrots with the olive oil and spices, making sure carrots are evenly coated.
Spread carrots onto a baking sheet in a single layer.
Roast carrots for 15 minutes at 400 degrees, toss, then roast another 10-15 minutes until cooked carrots are fork-tender. Serve immediately.
What is ras el hanout?
Ras el hanout is a Moroccan spice blend that has touches of cinnamon, corriander, and cumin. It's one of those spice blends that is full of fall flavors. It pairs wonderfully with roasted vegetables.
Ras el hanout can be found at many speciality grocery stores, and Target and Whole Foods also carry the blend in their spices section. If you can't find it where you live, you can also buy it online here. In a pinch, you could use garam masala or five spice powder.
How to serve the carrots
These carrots are delicious served as is, topped with some fresh parsley, cilantro, or mint leaves. Lemon zest would also add a bright flavor to the roasted carrots. To add a little bit of additional flavor, serve with goat cheese crumbles or feta crumbles.
You can also serve the carrots alongside some crispy chickpeas, or on top of a dahl like this red lentil dahl.

- Don't overcrowd the carrots on the baking sheet, otherwise they will steam and not roast.
- Cooking time may depend on how large you slice the carrots.
- Either orange carrots or heirloom carrots (aka rainbow carrots) can be used for this recipe.

- 1 Tablespoon olive oil
- ¾ teaspoon ras el hanout
- ¼ teaspoon salt
Instructions
- Preheat oven to 400 degrees F.
