Harissa Roasted Tomatoes

Harissa Roasted Tomatoes are a delicious addition to any meal! Add these to pastas, on top of chicken or fish, or in a salad or grain bowl.

Ingredients

  • 6 oz cherry tomatoes
  • 1 Tablespoon olive oil
  • 2 teaspoons harissa
  • salt

Instructions

  • Preheat oven to 400 degrees F.
  • Wash and dry the tomatoes, then slice each tomato in half and place in a medium bowl.
  • Add the olive oil, harissa, and a sprinkling of salt, and toss to combine.
  • Add the tomatoes to a baking sheet and roast in the oven for 20 minutes.
  • Remove from the oven and serve as desired.

Notes

  • This recipe is easy to double, triple, or quadruple.
  • Watch harissa tomatoes carefully to make sure they don't burn. You want them to roast, but not burn.
  • Tossing well with oil should help keep the roasted tomatoes from sticking.
