Air Fryer Caprese Chicken

Air Fryer Caprese Chicken is so flavorful and easy to make for lunch or dinner. This chicken is topped with mozzarella cheese and tomato slices and gets perfectly cooked in the air fryer.

Ingredients

  • 1 chicken breast
  • 2 teaspoons olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tomato roma or campari, sliced
  • 2 Tablespoons shredded mozzarella
  • 4 teaspoons shredded mozzarella
  • fresh basil leaves

Instructions

  • Pat chicken breast dry with paper towels. Cut chicken breast in half so that you have two thinner slices. (This will allow chicken to cook more quickly in the air fryer).
  • Drizzle olive oil over each chicken breast and rub into the surface. Season with salt and pepper.
  • Place chicken breasts in the air fryer, then top each with 1 Tablespoon shredded mozzarella. Add tomato slices on top, then top with an additional 2 teaspoons mozzarella.
  • Air fry at 400 degrees F for 15 minutes, or until chicken reaches internal temperature of 165 degrees F.
  • Plate, and top with fresh basil leaves.

Notes

  • All air fryers cook differently and cooking times may differ based on the thickness of your chicken breast. Use a meat thermometer to know when chicken is cooked (an internal temperature of 165 degrees F is what you need!)
  • If you want your tomatoes and cheese a little less done, you can cook the chicken for 5 minutes, then add the cheese and tomato slices after 5 minutes.
