Air Fryer Caprese Chicken is so flavorful and easy to make for lunch or dinner. This chicken is topped with mozzarella cheese and tomato slices and gets perfectly cooked in the air fryer.
I love cooking chicken in my air fryer. And while I absolutely love chicken thighs, I've been leaning into cooking chicken breasts. There are so many things you can do with them!
I recently did a chicken breast that was covered in crispy onions and it was DELICIOUS, but when I want something more Mediterranean? I make air fryer caprese chicken.
This chicken breast is seasoned, then topped with mozzarella cheese and fresh tomato slices for a dish that is both fresh and flavorful.
And to round out those caprese vibes? I alway top with fresh basil leaves. So good. I cannot stop making this. Easy. Tasty. Flavorful.

How to customize
Want to make a spicy caprese chicken? There are a few options. Season your chicken with some harissa, red pepper flakes, or some calabrian chili paste before adding the mozzarella cheese.
What to serve with the caprese chicken
With the air fryer caprese chicken, I love serving something else that is Mediterranean-inspired. I typically pair with a Tuscan kale salad, air fryer lemon zucchini, or air fryer Mediterranean vegetables.
It would also be delicious with air fryer smashed potatoes or air fryer lemon asparagus!
Recipe notes
- All air fryers cook differently and cooking times may differ based on the thickness of your chicken breast. Use a meat thermometer to know when chicken is cooked (an internal temperature of 165 degrees F is what you need!)
- If you want your tomatoes and cheese a little less done, you can cook the chicken for 5 minutes, then add the cheese and tomato slices after 5 minutes.
How to make air fryer caprese chicken
Cut a chicken breast in half so that you have two thinner slices. (This will allow chicken to cook more quickly in the air fryer).
Drizzle olive oil over chicken and season with salt and pepper.
Add chicken to your air fryer basket.
Top with mozzarella cheese. You can use shredded or sliced, whichever you have on hand.
Top with tomato slices.
Add a little extra cheese if you like.
Air fry at 400 degrees for 15 minutes. (Internal temperature of chicken should be at least 165 degrees F).
Plate, and top with fresh basil leaves.

Air Fryer Caprese Chicken

Ingredients
- 1 chicken breast
- 2 teaspoons olive oil
- 1 pinch salt
- 1 pinch black pepper
- 1 tomato roma or campari, sliced
- 2 Tablespoons shredded mozzarella
- 4 teaspoons shredded mozzarella
- fresh basil leaves
Instructions
- Pat chicken breast dry with paper towels. Cut chicken breast in half so that you have two thinner slices. (This will allow chicken to cook more quickly in the air fryer).
- Drizzle olive oil over each chicken breast and rub into the surface. Season with salt and pepper.
- Place chicken breasts in the air fryer, then top each with 1 Tablespoon shredded mozzarella. Add tomato slices on top, then top with an additional 2 teaspoons mozzarella.
- Air fry at 400 degrees F for 15 minutes, or until chicken reaches internal temperature of 165 degrees F.
- Plate, and top with fresh basil leaves.
