Prepare vegetables and chicken. Cut chicken into 1.5 inch pieces. Dice zucchini into thick coins and cut the bell pepper into large chunks (discarding stem and seeds).
Preheat air fryer for 5 minutes at 400 degrees F.
While air fryer preheats, add olive oil, dried oregano, salt, and garlic powder to a large bowl. Stir to combine. Add chicken and vegetables to the bowl and stir until everything is coated.
Add to the air fryer. Cook at 400 degrees for 13-15 minutes, shaking a couple of times during cooking.
Plate and enjoy.
Notes
The recipe as written will serve one person. However, if you serve with rice or a salad, this could serve two people. This recipe is easy to double if serving more or if you're meal prepping.
This recipe is easy to customize. If you would like another herb, simply swap it out for the oregano. If you want it spicy, add some red pepper flakes to the oil mixture.
For a touch of brightness, serve with a squeeze of lemon juice or even some crumbled feta (or both!)
