Air Fryer Chicken and Vegetables

Air fryer chicken and vegetables is a delicious meal that cooks all at once in the air fryer. It's an easy recipe that can be made in less than 25 minutes.

I still just love meals that you can make all at once. Air fryer chicken and vegetables is one of those meals. You really just dice everything up, season it all together, and then cook it in the air fryer. It's so easy and it's almost like the air fryer version of a sheet pan meal.

The main ingredients in this air fryer chicken and veggies are chicken breast, bell pepper, and zucchini. You can always add some diced onion, tomatoes, or other veggies if you enjoy (note that things like potatoes will require a longer cook time).

Ingredients

  • Chicken breast
  • Bell pepper
  • Zucchini
  • Olive oil
  • Dried oregano
  • Garlic powder
  • Salt

How to make air fryer chicken and vegetables

First, chop up your veggies and chicken if needed! Preheat your air fryer for 5 minutes at 400 degrees F (200 degrees C).

Next, add the olive oil, dried oregano, garlic powder, and salt to a large bowl.

Stir to combine.

Add the zucchini, bell pepper, and chicken to the bowl. Stir until coated in oil and seasonings.

Add to the preheated air fryer.

Air fry at 400 degrees F for 13-15 minutes, shaking a couple of times during cooking.

Plate and enjoy! You can serve over rice or another grain or simply enjoy as is.

Recipe notes

  • The recipe as written will serve one person. However, if you serve with rice or a salad, this could serve two people. This recipe is easy to double if serving more or if you're meal prepping.
  • This recipe is easy to customize. If you would like another herb, simply swap it out for the oregano. If you want it spicy, add some red pepper flakes to the oil mixture.
  • For a touch of brightness, serve with a squeeze of lemon juice or even some crumbled feta (or both!)

Ingredients
  

  • 1 chicken breast (about 6 oz)
  • 1 zucchini
  • 1 bell pepper ideally red, orange, or yellow
  • 2 Tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder

Instructions
 

  • Prepare vegetables and chicken. Cut chicken into 1.5 inch pieces. Dice zucchini into thick coins and cut the bell pepper into large chunks (discarding stem and seeds).
  • Preheat air fryer for 5 minutes at 400 degrees F.
  • While air fryer preheats, add olive oil, dried oregano, salt, and garlic powder to a large bowl. Stir to combine. Add chicken and vegetables to the bowl and stir until everything is coated.
  • Add to the air fryer. Cook at 400 degrees for 13-15 minutes, shaking a couple of times during cooking.
  • Plate and enjoy.
