Air fryer gochujang sweet potatoes are a spicy side dish that have so much flavor with only a few ingredients. This is a minimal effort but high reward dish.
Preheat the air fryer for 5 minutes at 400 degrees F (200 degrees C).
Scrub and dry sweet potatoes. Slice in half lengthwise. Drizzle with olive oil, coating all the surfaces with olive oil. Sprinkle with salt and pepper.
Place sweet potatoes in air fryer basket face up and air fry for 15 minutes. Flip, then air fry for another 10 minutes.
To a small bowl, add the gochujang paste, butter, and honey. Microwave for 10-20 seconds until butter is melted. Mix everything together.
Flip sweet potatoes again so they are face up and brush on the gochujang glaze. Air fry for an additional 2-3 minutes.
Plate and sprinkle with sesame seeds, if desired.
Notes
Cook time may depend on the size of your sweet potatoes. Poke your sweet potatoes with a fork to check for doneness before adding the gochujang glaze.
Gochujang can be spicy! Use less gochujang if you're sensitive to spice.
These reheat nicely! If you have leftovers, store in the refrigerator and reheat for 3-5 minutes in the air fryer.
