For Couscous
½cupMoroccan couscous
½cupwater
Instructions
Prepare the chicken marinade by adding Greek yogurt, juice from ½ a lemon, dried oregano, garlic powder, salt, and pepper to a bowl. Stir to combine.
Pat chicken dry. If using chicken thighs, add them to the bowl with the marinade. If using chicken breast, slice each one in half to get two thinner pieces, then add to the bowl. Mix the chicken in the marinade to coat all the chicken. Cover and set aside for 30 minutes.
Dice tomatoes into chunks and add to a separate bowl with the diced cucumber and sliced red onion. Add olive oil, red wine vinegar, salt, and pepper. Mix together and allow to marinate. Marinate for at least 15 minutes, stirring every 5 minutes.
Prepare the couscous by adding dried couscous to a heat-safe bowl and pouring ½ cup boiling hot water over the top. Cover with plastic wrap. After 10 minutes, uncover and fluff with a fork.
To cook the chicken, preheat the air fryer for 5 minutes at 400 degrees F (200 degrees C). Add the chicken to the air fryer basket and cook at 400 degrees F for 13-16 minutes (see notes for cook times), or until chicken reaches at least 165 degrees F. Remove from the air fryer and let rest for 5 minutes.
To prepare the bowl, add couscous, tomato cucumber salad, and sliced chicken to the bowl. Top the tomato salad with feta.
Notes
If using chicken breast, either slice in half to get two thinner pieces or pound to be thinner, then cut in half. If using boneless skinless chicken thighs, simply use as is.
All air fryers cook differently and cook times will depend on the thickness of your chicken (especially if using chicken breast). Chicken should be cooked to a temperature of at least 165 degrees F to be safe to eat. I usually like to cook chicken thighs to at least 175 degree F, because I think the texture is better. Use a meat thermometer to check for the internal temperature of the chicken.
I recommend cooking thinly sliced chicken breast for 12-15 minutes and chicken thighs for 13-16 minutes at 400 degrees F.
You don't need to flip the chicken during cooking, but you do need to preheat the air fryer for 5 minutes prior to adding the chicken.
You may need to cook in 2 batches, depending on the size of your chicken and size of your air fryer.
