Air Fryer Honey Mustard Potatoes are a delicious and flavorful side dish. These roasted potatoes are easy to make with dijon mustard, honey, and spices.
In a large bowl, add the olive oil, dijon, honey, tarragon, garlic powder, and salt. Stir to combine.
Wash and dry potatoes. Dice into cubes about ¾ inch (no larger than 1 inch) in size.
Add potatoes to the dijon sauce and stir until coated.
Pour into the air fryer basket in a single layer and cook at 400 degrees F (200 degrees C) for 15-20 minutes, tossing halfway through cooking time.
Pierce potatoes with a fork to check for doneness. If not done yet, air fry another 3-5 minutes.
Notes
Cook time will depend on how large you cut your potatoes. I suggest no larger than 1 inch chunks. If you have to cook for too long, the honey will burn in the air fryer.
Poke the largest potato pieces with a fork to test and see if potatoes are cooked through before removing from the air fryer.
