Air Fryer Honey Mustard Potatoes are a delicious and flavorful side dish. These roasted potatoes are easy to make with dijon mustard, honey, and spices.
I love roasted potatoes in the air fryer. They just come out crispy on the outside and fluffy on the inside.
These air fried potatoes are covered in a honey mustard sauce before being cooked in the air fryer. The result? Big honey mustard flavor, with a slight caramelization from the honey.

Ingredients
- Baby potatoes - I love using the little baby potatoes, but you can use slightly larger ones. Just make sure to cut into ¾ inch pieces.
- Dijon mustard - Dijon mustard gives this dish the nice mustard flavor.
- Olive oil
- Honey
- Salt
- Dried tarragon - I used dried tarragon, but you could use another dried herb that pairs well with mustard like parsley or thyme.
- Garlic powder

- Cook time will depend on how large you cut your potatoes. I suggest no larger than 1 inch chunks. If you have to cook for too long, the honey will burn in the air fryer.
- Poke the largest potato pieces with a fork to test and see if potatoes are cooked through before removing from the air fryer.
How to make air fried honey mustard potatoes
Add the olive oil, dijon mustard, honey, garlic powder, salt, and dried tarragon to a large bowl.
Stir to combine.
Wash and dry baby potatoes and slice into small chunks, about ¾ inch in size. Place in the bowl and stir to coat all potatoes in honey mustard sauce.
Add potatoes in a single layer to air fryer basket.
Air fry at 400 degrees F for 15-20 minutes, or until soft in the middle when pierced with a fork.
Plate and enjoy! Top with fresh herbs if desired.
How to customize
Want a little smokiness? Add some smoked paprika or chili powder to the honey mustard sauce.
Want a bit of spice? Add a pinch of cayenne or red pepper flakes.
