Air fryer breaded zucchini chips get crispy and crunchy from panko breadcrumbs. This easy recipe doesn't use any oil, and takes less than 15 minutes to cook.
Wash and dry the zucchini. Slice into ⅛ inch rounds, discarding the ends.
In one bowl, add the flour, salt, garlic powder, onion powder, and smoked paprika. Stir to combine.
In another bowl, crack the egg and whisk with a fork.
In a third bowl, add the panko breadcrumbs.
Dip each piece of zucchini in the flour mixture, then the egg mixture, then the panko mixture, coating both sides. Place in the air fryer basket. Repeat for all the zucchini slices.
Air fry at 400 degrees F for 8-10 minutes, until panko is browned and crispy.
Notes
All air fryers cook differently. Adjust cooking times as needed.
This recipe serves two as a side dish, but is easy to double or triple! Note that you may need to cook the zucchini in batches, depending on the size and type of your air fryer.
