Air fryer breaded zucchini chips get crispy and crunchy from panko breadcrumbs. This easy recipe doesn't use any oil, and takes less than 15 minutes to cook.

Panko is such an easy way to make things crispy and delicious in the air fryer! And I just love breading zucchini with seasonings and panko.
I've made air fryer panko salmon, air fryer panko cod, air fryer panko chicken, and now this air fryer panko zucchini.

Flavorful - The spices used in the flour mixture help to season the zucchini and add flavor. Want more flavor? Add some dried herbs to the panko breading.

How to customize
This recipe is easy to customize by switching out or adding to the spices. Want a little spice? Add a little ground cayenne to the flour mixture.
If you want the crispy breaded zucchini to have some herbs, add some dried parsley, thyme, oregano, or Italian seasoning to the panko breadcrumbs.

How to make air fried breaded zucchini chips
First, slice the zucchini into rounds about ⅛ inch thick. Don't worry if your zucchini isn't all the same thickness, it will still cook nicely in the air fryer.
Next, in one bowl, add the flour, smoked paprika, garlic powder, onion powder, and salt. Stir to combine together.
In another bowl, crack an egg and whisk it with a fork. In your final bowl, add the panko breadcrumbs. Now you have your dipping stations set up!
The order is -- flour, egg, panko.
First dip each zucchini chip in the flour on both sides, then dip in the egg so it is coated, and finally in the panko.
After you coat each in panko, place in the air fryer basket. (I used air fryer parchment paper).
Depending on the size of your zucchini and also how many slices you wound up with, you may need to cook in batches. With my zucchini, my slices just fit perfectly in the air fryer.
Air fry at 400 degrees F for 8-10 minutes.
Carefully remove the air fried zucchini chips from air fryer with a spatula or tongs.

Instructions
- Wash and dry the zucchini. Slice into ⅛ inch rounds, discarding the ends.
- In one bowl, add the flour, salt, garlic powder, onion powder, and smoked paprika. Stir to combine.
- In another bowl, crack the egg and whisk with a fork.
- In a third bowl, add the panko breadcrumbs.
- Dip each piece of zucchini in the flour mixture, then the egg mixture, then the panko mixture, coating both sides. Place in the air fryer basket. Repeat for all the zucchini slices.
- Air fry at 400 degrees F for 8-10 minutes, until panko is browned and crispy.
