Panko is such an easy way to make things crispy and delicious in the air fryer! And I just love breading zucchini with seasonings and panko. I find that panko and zucchini are a match made in heaven. The panko brings a tasty delicious crunch to the zucchini squash.

The breaded zucchini is delicious served with a variety of dipping sauces.

Ingredients

  • Zucchini
  • Flour
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Egg
  • Panko

How to make air fried breaded zucchini chips

First, slice the zucchini into rounds about ⅛ inch thick. Don't worry if your zucchini isn't all the same thickness, it will still cook nicely in the air fryer.

Next, in one bowl, add the flour, smoked paprika, garlic powder, onion powder, and salt. Stir to combine together.

In another bowl, crack an egg and whisk it with a fork. In your final bowl, add the panko breadcrumbs. Now you have your dipping stations set up!

The order is -- flour, egg, panko.

First dip each zucchini chip in the flour on both sides, then dip in the egg so it is coated, and finally in the panko.

After you coat each in panko, place in the air fryer basket. (I used air fryer parchment paper).

Depending on the size of your zucchini and also how many slices you wound up with, you may need to cook in batches. With my zucchini, my slices just fit perfectly in the air fryer.

  • This recipe serves two as a side dish, but is easy to double or triple! Note that you may need to cook the zucchini in batches, depending on the size and type of your air fryer.

How to customize

This recipe is easy to customize by switching out or adding to the spices. Want a little spice? Add a little ground cayenne to the flour mixture.

If you want the crispy breaded zucchini to have some herbs, add some dried parsley, thyme, oregano, or Italian seasoning to the panko breadcrumbs.

Want a parmesan version? Add some grated or shredded parmesan to the panko mixture to make air fryer breaded parmesan zucchini.
