Combine olive oil, salt, smoked paprika, garlic powder, and onion powder in a small bowl.
Rinse and scrub potatoes if needed. Cut into half lengthwise, then in half again, then in half one more time until you get 8 wedges per potato. Place potato wedges in a large bowl.
Add olive oil and seasonings and toss to combine so that potatoes are coated in oil and spices.
Add potato wedges to air fryer basket and cook at 400 degrees F for 15-20 minutes, tossing after 8 minutes.
Plate and top with fresh parsley if desired. Serve with your favorite dipping sauce.
Notes
Watch closely for doneness and poke with a fork to make sure potato wedges are soft. Mine were perfect at 15 minutes, but you may need up to 20 depending on the thickness of your wedges and the desired level of crispness.
You can switch up the seasonings on these as you like! You can use Old Bay seasoning, chili powder, dried Italian seasoning, etc. to customize the potato wedges.
