When I have russet potatoes in my house, for some reason I always want to turn them into potato wedges. I used to cook them in the oven, but now I always air fry them. So much quicker and easier!
The air fried potato wedges make the perfect easy side dish. They are flavorful and delicious. I usually serve mine with a dipping sauce, but my husband thinks they are perfectly seasoned as is. I think the first time he ever tried these he said "wow, that is so good. I don't even need ketchup."

Ingredients
- Russet potatoes
- Olive oil
- Smoked paprika
- Garlic powder
- Onion powder
- Salt
- Parsley (optional)
How to make air fryer potato wedges
Preheat air fryer for 5 minutes at 400 degrees F. Add the olive oil, salt, garlic powder, onion powder, and smoked paprika to a small bowl.
Stir to combine.
Rinse and scrub the potatoes. Cut each potato in half lengthwise, then in half again, and each of those into halves again. Each potato should result in 8 wedges.
Add the oil and seasonings to the bowl. Mix together to coat all potato wedges in the oil and seasonings.
Add potato wedges to air fryer basket.
Air fry at 400 degrees F for 15-20 minutes, tossing after 8 minutes.
Serve as desired! I like topping mine with fresh parsley and serving with a dipping sauce.
Recipe tips
- Watch closely for doneness and poke with a fork to make sure potato wedges are soft. Mine were perfect at 15 minutes, but you may need up to 20 depending on the thickness of your wedges and the desired level of crispness.
- You can switch up the seasonings on these as you like! You can use Old Bay seasoning, chili powder, dried Italian seasoning, etc. to customize the potato wedges.
How to store leftovers
Store any leftover potato wedges in an airtight container in the refrigerator. To reheat, simply add back to your air fryer and cook for 3-5 minutes or until hot on the inside.
