½cupshredded mozzarella cheeseplus a little extra for topping tomatoes
¼cupshredded parmesan cheese
1Tablespoonfresh basil leavesminced into strips
½teaspoongarlic powder
½teaspoonsalt
¼teaspoonblack pepper
Instructions
Wash the tomatoes if needed, then slice off the tops. Scoop out the insides of the tomatoes into a medium bowl.
Place the tomatoes cut side down onto paper towels to drain/dry for 20 minutes.
While tomatoes dry, separate the thicker pulp from the liquidy part of the tomatoes. Roughly chop the thicker pulp. (you will discard the liquidy part of the tomatoes or save to use in another recipe).
Add the tomato pulp to a medium bowl. Add the panko, mozzarella, parmesan, garlic powder, chopped basil, salt, and black pepper. Stir until completely combined.
Stuff each of the tomatoes with the stuffing. Place tomatoes in the air fryer basket. Top with a little more mozzarella cheese.
