Air fryer stuffed tomatoes cook up in less than 15 minutes. The stuffed tomatoes are delicious and incredibly easy to make.
It's tomato season! But if you're reading this post when it's not, luckily this dish works even when you have off-season tomatoes. That's because the air fried stuffed tomatoes get super flavorful when cooked.
I love making the stuffed tomatoes because it's mostly a hands-off dish. You do need to make the filling and scoop out the tomatoes, but otherwise you're just waiting for the insides of the tomatoes to dry out a bit and for the tomatoes to get cooked in the air fryer
I also love how customizable the tomatoes are! Below is a base recipe to make delicious Italian-inspired stuffed tomatoes in the air fryer, but you can absolutely add different seasoning and spices depending on what you're in the mood for.
Ingredients
- Large tomatoes - beefsteak, large campari, or other larger tomatoes. I don't recommend roma or smaller varieties.
- Panko breadcrumbs
- Shredded mozzarella cheese
- Shredded parmesan cheese
- Basil leaves - if you don't have fresh basil, you can substitute with 1 teaspoon of Italian seasoning
- Garlic powder
- Salt
- Black pepper
How to make air fryer stuffed tomatoes
Wash the tomatoes and then dry. Cut off the tops and scoop out the insides into a medium bowl.
Place the tomatoes cut side down on paper towels for 20 minutes to dry.
Meanwhile, separate out the more liquid part of the tomato insides from the thicker, pulpier part. Roughly chop the pulpier part and place in a medium bowl. (You can discard the more liquid part or use for a different recipe!)
To the bowl of chopped tomato insides, add the rest of the ingredients.
Mix all together until completely combined.
Stuff the tomatoes with the cheese mixture. You may have leftovers, depending on the size of your tomatoes. However, mine fit perfectly here!
Add to air fryer basket and top with a little more mozzarella cheese.
Air fry at 350 degrees F for 10-12 minutes.
Remove from the air fryer and enjoy!
Recipe tips
- Try to get as much filling as you can in the tomatoes! But you may have some leftover. It will depend on the size of your tomatoes.
- You can customize the filling however you want! Add some red pepper flakes, smoked paprika, or other seasonings to customize based on the flavors you want.
- All air fryers cook differently. Adjust cooking times as needed.
