Wash and dry the sweet potato. Cut sweet potato in half lengthwise, then into wedges. (Note: Each sweet potato should form 8 wedges).
Add sweet potato wedges to a large bowl. Add the olive oil, smoked paprika, dried thyme, salt, and pepper. Toss to combine.
Place in the air fryer basket in a single layer. Cook at 380 degrees F for 15-18 minutes, flipping halfway through cooking.
Remove and enjoy!
Notes
This recipe uses 1 medium sweet potato. If using small sweet potatoes, use 2 sweet potatoes instead of one.
Cook times may depend on the size of your sweet potato. Check frequently for doneness around the 14-15 minute mark, and leave in until sweet potatoes are done to your liking.
