To a large bowl add olive oil, paprika, garlic powder, and salt. Stir to combine. Add potatoes to the bowl and stir until potatoes are coated.
Add potatoes to a foil-lined baking sheet. Place in the oven and bake for 40-50 minutes, or until tender when pierced with a fork.
While potatoes cook, make the bang bang sauce. Add mayonnaise, chili sauce, sriracha, and lemon juice to a bowl. Stir to combine.
Once potatoes are done cooking, plate and then top with bang bang sauce drizzled on top (you may have leftover sauce). Add any additional toppings and enjoy.
Notes
Ovens may cook differently. Pierce a few potatoes with a fork to ensure they are tender on the inside before plating.
If you have leftover bang bang sauce, it can be stored in the refrigerator for up to 7 days.
