Calabrian peach tomato salad is the perfect summer salad. It's juicy with fresh tomatoes, peaches, and herbs and gets a little kick from Calabrian chili paste.
Slice peaches and tomatoes into chunks and place in a large bowl. Thinly slice red onion and add to the bowl. Add the olive oil, balsamic vinegar, calabrian chili paste, and sprinkle with salt and pepper.
Stir to combine and then let sit for 10 minutes for flavors to develop.
Roughly tear mint and basil leaves and add to the bowl. Stir to combine, and serve.
Notes
If you would like to peel the peaches, you can. I prefer the skins on, but it's a matter of preference!
I used small campari tomatoes for this, but you could also use 1 large heirloom tomato, 2 roma tomatoes, or a handful of cherry tomatoes (halved).
This can be stored in the refrigerator before serving. However, I like to add the mint and basil leaves right before serving.
The calabrian chili paste adds a nice touch of spicy flavor, which I love. However, if you want a more classic tomato and peach salad without the spice, simply leave out the calabrian chili paste.
