Calabrian peach tomato salad is the perfect summer salad. It's juicy with fresh tomatoes, peaches, and herbs and gets a little kick from Calabrian chili paste.
It is the season when I buy peaches and tomatoes every single time I go to the grocery store. When they are in season and fresh, they are so very delicious.
The other day, my husband and I were preparing lunch and I spotted the tomatoes and peaches on the counter. I immediately knew this tomato peach salad would be the perfect complement to our lunch. And so I whipped it up in almost no time at all.
And it was delicious. And so fresh. And so flavorful. The calabrian chili paste adds just the perfect amount of spice to the salad. Definitely a recipe worth repeating.
Ingredients
- Peaches - perfectly ripe
- Tomatoes - campari, roma, heirloom, or cherry tomatoes
- Red onion - thinly sliced, you just need a handful
- Olive oil
- Balsamic vinegar
- Calabrian chili paste
- Fresh basil
- Fresh mint
- Salt and pepper
How to make Calabrian peach tomato salad
Wash the peaches and tomatoes. Pit the peaches.
Slice peaches and tomatoes into chunks and place in a large bowl. Thinly slice red onion and add to the bowl. Add the olive oil, balsamic vinegar, calabrian chili paste, and sprinkle with salt and pepper.
Stir to combine and then let sit for 10 minutes for flavors to develop.
Roughly tear mint and basil leaves and add to the bowl.
Stir to combine, and then plate and enjoy immediately.
Recipe tips
- If you would like to peel the peaches, you can. I prefer the skins on, but it's a matter of preference!
- I used small campari tomatoes for this, but you could also use 1 large heirloom tomato, 2 roma tomatoes, or a handful of cherry tomatoes (halved).
- This can be stored in the refrigerator before serving. However, I like to add the mint and basil leaves right before serving.
- The calabrian chili paste adds a nice touch of spicy flavor, which I love. However, if you want a more classic tomato and peach salad without the spice, simply leave out the calabrian chili paste.
What to serve with the tomato peach salad
This is a salad that pairs well with so many dishes! I especially love it with salmon like this air fryer salmon or air fryer brown sugar salmon. It's also delicious with chicken like air fryer panko chicken or air fryer honey dijon chicken.
