Air fryer breakfast potatoes are easy to make for a delicious breakfast. The seasoned potatoes get crispy and golden brown in the air fryer, and the peppers and onions add the perfect bit of extra flavor.
Wash and dry your potatoes. Cut into ½ inch cubes.
Take your bell pepper and remove the top and the inside seeds and ribs. Slice into short strips. Peel your onion and slice into short strips.
Add your potatoes, peppers, and onion to a large bowl.
Add the olive oil and seasonings to the bowl. Toss to combine.
Add the potatoes, peppers, and onion to your air fryer basket. Cook at 400 degrees F for 15-20 minutes, shaking every 5 minutes.
Plate and enjoy.
Notes
Make sure you cut your potatoes into ½ inch cubes, and try to keep them uniform in size. If you cut them larger, like 1 inch, they will need an extra 5-10 minutes in the air fryer, and the onions and peppers may get burned.
The potatoes will need to be shaken in the air fryer basket every 5 minutes or so to make sure they are cooking evenly.
Before serving, check your potatoes in the air fryer. Poke a couple with a fork to make sure they are tender inside.
All air fryers cook differently. Adjust cooking times as needed, and check frequently for doneness starting at 12 minute mark.
