Air Fryer Breakfast Potatoes

Air fryer breakfast potatoes (or air fryer home fries) are easy to make for a delicious breakfast. The seasoned potatoes get crispy and golden brown in the air fryer, and the peppers and onions add the perfect bit of extra flavor.

Gone are the days of making breakfast potatoes (sometimes also called home fries) in a boring skillet. Not with air fryers in our lives. These air fryer breakfast potatoes are easy to make, so flavorful, and cook perfectly.

The potatoes get crispy on the outside. The bell peppers and onion get perfectly caramelized. And the garlic powder and onion powder work to provide just the right seasoning.

This recipe is perfect in the summer (no standing by a hot stove stirring potatoes), but just as delicious in those fall and winter months. And it makes enough for the whole family as a breakfast side dish.

Ingredients:

  • Potatoes - I prefer to use small yellow/white potatoes like yukon gold potatoes, but you can use red potatoes or even russet potatoes
  • Bell Peppers - You can use red, orange, yellow or green bell peppers
  • Onions - Yellow, white, or red onions would all work here. I usually use yellow onions when making the air fryer breakfast potatoes
  • Olive oil - The olive oil coats the potatoes, peppers, and onions, helping everything to cook properly
  • Onion powder - Onion powder gives this dish that touch of spice
  • Garlic powder - Garlic powder also helps bring out the flavors of potatoes and peppers
  • Salt - Salt helps to season the dish properly. I use regular granulated white salt
  • Fresh herbs (optional, for garnish) - If adding fresh herbs, some fresh cilantro or parsley would be delicious

What type of potatoes to use:

I prefer to use small yellow potatoes when making breakfast potatoes. They get crispy on the outside and creamy on the inside. Plus, they just cook perfectly in the air fryer.

However, you can also use red potatoes or russet potatoes. Just make sure to cut into ½ inch cubes so they cook properly.

You will always want to poke a few potatoes with a fork to make sure they are cooked to perfection before removing from the air fryer basket.

How to customize:

Air fryer breakfast potatoes are so easy to customize! You can easily add more (or less) peppers or onions. I left black pepper out of mine, but you can season with more salt and pepper as needed.

You can also add different spices and seasonings to give it different flavors.

For a Mexican vibe, add some cumin and a squeeze of fresh lime juice at the end.

For a Greek vibe, add some oregano and then top with some feta.

I also love some smoked paprika, celery salt, or chipotle chili powder.

Storage and reheating:

The potatoes and peppers can be stored in an airtight container in the refrigerator for a couple of days.

To reheat, either pop back into your air fryer on 350 degrees F for a few minutes, or heat a tiny bit of olive oil in a skillet and saute until hot and cooked through.

What do I do with leftover peppers?

Air fryer breakfast potatoes use 1 bell pepper to make. However, sometime you might want to mix for more colors. Maybe you want to use ½ a red pepper and ½ a green bell pepper.

That's easy enough, but then you have leftover pepper halves.

If I know I'm not going to use them right away, I typically freeze my leftover bell peppers to use later. Check out our tips for freezing peppers to make sure you do it correctly!

How to serve:

I love these breakfast potatoes as is. So flavorful and delicious.

However, you can also add a fried or poached egg (I love making air fryer poached eggs) to the top. Or even serve alongside some scrambled eggs. You can even toss in some cooked bacon (air fryer twisted bacon is delicious) or breakfast sausage.

I also love toasting up some quick Air Fryer English Muffins. Takes less than 5 minutes.

Top with any cheese you like, or fresh herbs.

Drinks wise, I love serving the breakfast potatoes with either an aeropress cappuccino or french press latte. If I'm craving a smoothie, my go-to is this kiwi cucumber smoothie or cinnamon banana smoothie.

The air fryer breakfast potatoes are also a perfect side dish to sweet breakfasts like bananas foster french toast, easy monkey bread, air fryer french toast sticks, or croissant french toast.

Recipe tips:

  • Make sure you cut your potatoes into ½ inch cubes, and try to keep them uniform in size. If you cut them larger, like 1 inch, they will need an extra 5-10 minutes in the air fryer, and the onions and peppers may get burned.
  • The potatoes will need to be shaken in the air fryer basket every 5 minutes or so to make sure they are cooking evenly.
  • Before serving, check your potatoes in the air fryer. Poke a couple with a fork to make sure they are tender inside.
  • All air fryers cook differently. Adjust cooking times as needed, and check frequently for doneness starting at 12 minute mark.

How to make:

First, wash and dry your potatoes. Then, slice the potatoes into ½ inch chunks and add to a large bowl.

Peel your onion. Remove the top and inside (seeds and stem) of the bell pepper. Slice your onions and peppers into short strips, then add to your bowl.

Add your seasoned peppers, onions, and potatoes to the air fryer basket. Cook for 15-20 minutes at 400 degrees F, shaking every 5 minutes.

  • Take your bell pepper and remove the top and the inside seeds and ribs. Slice into short strips. Peel your onion and slice into short strips.
  • Add your potatoes, peppers, and onion to a large bowl.
  • Add the olive oil and seasonings to the bowl. Toss to combine.
  • Add the potatoes, peppers, and onion to your air fryer basket. Cook at 400 degrees F for 15-20 minutes, shaking every 5 minutes.
  • Plate and enjoy.
