Wash your strawberries and slice off the tops and add to a cup or bowl.
Melt butter in a medium skillet and then add shredded kataifi pastry. Stir frequently with a spatula until kataifi is browned and crispy. Transfer the crispy kataifi pastry to a bowl.
Add pistachio creme to the bowl and stir to combine. Top the strawberries with the pistachio mixture.
Melt your chocolate and coconut oil. (You can do this in short bursts in the microwave, or use a double boiler).
Pour the melted chocolate over the strawberries, top with chopped pistachios, and enjoy.
Notes
If your pistachio cream is on the sweeter side, you may choose to use a semi-sweet or dark chocolate.
This recipe is easy to customize! You can slice up your strawberries instead of leaving them whole if you prefer. You can also add a little tahini to the pistachio cream mixture if you want.
If you're making this in a cup/glass, you can layer the strawberries, chocolate, and crispy pistachio mixture.
