In a large, microwave-safe bowl, melt the cream cheese for 10 seconds in the microwave. Add sugar and peppermint extract and mix together with a spatula or whisk until combined.
Add milk and heavy cream and whisk together. Pour into your Ninja Creami container.
Freeze for at least 24 hours.
Process on the ice cream setting. If crumbly, add a splash of milk and respin. Top with crushed peppermint or candy cane pieces.
Notes
If ice cream is crumbly after processing, add a splash of milk and respin.
To store leftovers, level out the top of the ice cream before returning to the freezer. This will allow you to reprocess if needed.
You can use this with a different vanilla base. Just make sure to swap out 1 teaspoon of vanilla extract for ½ teaspoon of peppermint extract.
