Peri peri chicken salad is a slightly spicy take on regular chicken salad. The peri peri sauce gives the chicken salad so much flavor. Double the recipe and enjoy all week long!
Add the mayonnaise, diced celery, diced onion, peri peri sauce, paprika, salt, pepper, and juice from half a lime.
Stir and mix together with a fork until all combined and mashed together.
Refrigerate for 30 minutes or until cold (if desired) and then enjoy!
Notes
You can use preshredded chicken or shred it yourself. I will take a whole chicken breast, boil it, and then shred it. That usually creates 1 cup of shredded chicken for me.
This recipe is easy to customize. Want it spicier? Simply add more peri peri sauce. Love celery? Add more! Hate celery? Leave it out!
I like to dice my ingredients small so they get evenly distributed and I don't have big chunks of celery or onion. However, it is up to you and how you prefer the texture of your chicken salad.
If you find red onions to be strong, soak them in cold water for 10 minutes before using (drain before adding to your chicken salad, of course). That can help take some of the "bite" off of them.
You can add fresh chopped herbs to top the chicken salad with! Cilantro, parsley, and tarragon are all great options.
