Peri peri chicken salad is a slightly spicy take on regular chicken salad. The peri peri sauce gives the chicken salad so much flavor. Double the recipe and enjoy all week long!

When I think about my favorite condiments, peri peri sauce is right up there at the top. It's spicy, a little acidic, and I just love the flavor it gives to food. And now that I've moved to Portugal, you can find peri peri sauce everywhere. Peri peri chicken is a big thing here.
So I decided that I would make a peri peri chicken salad. No, I'm not talking about a salad with some peri peri chicken thrown in. I'm talking about shredded chicken mixed with celery (if you like celery), some onions, and a healthy dose of peri peri sauce. Just enough to give it that delicious peri peri flavor, but not too much that it overpowers and makes everything too spicy.
So if you're a fan of peri peri and spice like me, grab a bottle and make this peri peri chicken salad! It's so easy and delicious served on bread, on a croissant, with crackers, in a wrap, etc.
Ingredients
- Shredded chicken - you can either boil chicken yourself to shred (you'll need one large chicken breast to make a cup), use rotisserie chicken, or buy shredded chicken at the grocery store.
- Mayo - Just find yourself a bottle or jar of mayo. You probably already have some in your fridge!
- Peri peri sauce - The brand of peri peri sauce you use is up to you. You can find it at many large grocery stores these days.
- Lime - You'll use the juice from half a lime for an extra bit of brightness and acidity.
- Celery - I think celery adds a nice crunchy freshness to this salad. Some people don't like celery, so if that is you, simply leave it out.
- Red onion - You'll need a little bit of red onion diced up really small. If you don't have red onion, you could also use a yellow or white onion.
- Paprika - I use regular ground paprika for this, but you can also use smoked paprika to give your chicken salad a bit of smokiness, and it would be delicious.
- Salt
- Pepper
Recipe tips
- This recipe is easy to customize. Want it spicier? Simply add more peri peri sauce. Love celery? Add more! Hate celery? Leave it out!
- I like to dice my ingredients small so they get evenly distributed and I don't have big chunks of celery or onion. However, it is up to you and how you prefer the texture of your chicken salad.
- If you find red onions to be strong, soak them in cold water for 10 minutes before using (drain before adding to your chicken salad, of course). That can help take some of the "bite" off of them.
- You can add fresh chopped herbs to top the chicken salad with! Cilantro, parsley, and tarragon are all great options.
How to make peri peri chicken salad
If you need to cook up your chicken and let cool. Shred chicken and measure out 1 cup of shredded chicken. Add to a bowl.
Dice up your celery and red onion into small pieces and add to the bowl.
Add the mayo, paprika, juice from half a lime, peri peri sauce, salt, and pepper.
Stir and mash together with a fork until completely combined. Chill for at least 30 minutes (the chicken salad tastes best cold in my opinion!), and then enjoy as desired!
Yum. I love having the chicken salad with crackers or on a toasted croissant.
