- 1 zucchini sliced into rounds ½ inch thick
- 5 oz cherry tomatoes
- 1 bell pepper diced into medium-large chunks
- ½ red onion diced into medium-large chunks
- 2 Tablespoons olive oil
- 1 teaspoon dried oregano
- ¼ teaspoon smoked paprika
- ½ teaspoon salt
- pepper to taste
Prep the vegetables (dice the onion and bell pepper, slice the zucchini into thick coins). Add the vegetables to a large bowl.
Add the olive oil, oregano, smoked paprika, salt, and a sprinkling of black pepper. Stir until vegetables are coated in the seasoning.
Add to the air fryer basket (parchment paper optional). Air fry at 400 degrees F for 15 minutes, tossing every 5 minutes.
Serve as desired (I love crumbled feta and fresh parsley or basil).
- This recipe is so delicious, but you can customize it! If you aren't a fan of red onion, leave it out. Want more zucchini? Add more!
- This can easily be doubled or tripled, but then you may need to cook the vegetables in batches.
