Air Fryer Mediterranean Vegetables

Air Fryer Mediterranean vegetables roast up perfectly in the air fryer. The combination of vegetables and spices is so flavorful. This is a delicious side dish that's so easy and quick to make.

If you've spent two seconds on my blog, you probably know how many air fryer recipes I have. I just love my air fryer so much. And these air fryer roasted vegetables are easy and delicious.

Tomatoes, zucchini, red onion, and bell pepper pair beautifully to create a flavorful side dish that only takes 15 minutes to roast in the air fryer.

Why make air fryer Mediterranean vegetables

Flavorful - The veggies are the perfect pairing. The tomatoes add that acidity, while zucchini and bell pepper add a nice fresh flavor. And then the onion just gets roasted to perfection in the air fryer to impart a touch of sweetness to the dish.

Easy - All you need to do is slice up the veggies, toss with spices, and pop into your air fryer.

Customizable - While I love this combination of vegetables, you can easily add some eggplant and/or mushrooms to the mix! I typically stay away from root vegetables like carrots/potatoes though, as those can take longer to cook.

Ingredients

  • Zucchini - just one zucchini works perfectly for this. I try for a medium size.
  • Cherry or grape tomatoes - Either cherry or grape tomatoes works for this recipe. Keep them whole.
  • Bell pepper - You can use any color of bell pepper! I prefer orange, yellow, or red for their bright colors that pair nicely with the zucchini and tomatoes.
  • Red onion - I used a quarter of a large red onion, but half of a medium or small would be delicious. Love onion? Add more!
  • Olive oil - You can use olive oil or avocado oil for these.
  • Dried oregano - Dried oregano helps to give it a delicious Mediterranean flavor. Don't have/like oregano? Use Italian seasoning instead.
  • Smoked paprika - Smoked paprika just helps give it that additional flavor that I love.
  • Salt - Salt helps bring out all the flavors of the Mediterranean vegetables.
  • Pepper - I just use some regular black pepper.

Serving suggestions

I love serving the air fryer Mediterranean vegetables with some crumbled feta cheese and fresh herbs (like parsley or basil).

They would also be delicious with a squeeze of fresh lemon juice, drizzle of balsamic vinegar, or topped with a harissa vinaigrette or preserved lemon vinaigrette.

And of course the Mediterranean roasted vegetables would be delicious tossed with some cooked pasta and maybe a little olive oil and balsamic vinegar.

Recipe tips

  • This recipe is so delicious, but you can customize it! If you aren't a fan of red onion, leave it out. Want more zucchini? Add more!
  • This can easily be doubled or tripled, but then you may need to cook the vegetables in batches.

Can you refrigerate?

While I do think the air fryer roasted vegetables are best enjoyed immediately, you can store leftovers in the refrigerator in an airtight container for 2 days. Reheat in the air fryer, a skillet, or the oven.

How to make Mediterranean vegetables in the air fryer

First, gather and prepare your vegetables. Remove the stem and insides of the bell pepper and then dice.

Remove the skin of the red onion and dice.

Dice the zucchini into coins, about ½ inch thick. Then add the zucchini, bell pepper, red onion, and cherry tomatoes to a large bowl.

Add the olive oil and spices, then toss to combine.

Add the vegetables to the air fryer basket in an even layer.

Cook vegetables at 400 degrees F for 15 minutes, tossing every 5 minutes.

So delicious!

Equipment

  • Air Fryer Parchment Paper

Ingredients
  

  • 1 zucchini sliced into rounds ½ inch thick
  • 5 oz cherry tomatoes
  • 1 bell pepper diced into medium-large chunks
  • ½ red onion diced into medium-large chunks
  • 2 Tablespoons olive oil
  • 1 teaspoon dried oregano
  • ¼ teaspoon smoked paprika
  • ½ teaspoon salt
  • pepper to taste

Instructions
 

  • Prep the vegetables (dice the onion and bell pepper, slice the zucchini into thick coins). Add the vegetables to a large bowl.
  • Add the olive oil, oregano, smoked paprika, salt, and a sprinkling of black pepper. Stir until vegetables are coated in the seasoning.
  • Add to the air fryer basket (parchment paper optional). Air fry at 400 degrees F for 15 minutes, tossing every 5 minutes.
  • Serve as desired (I love crumbled feta and fresh parsley or basil).

    Just purchased an air fryer after Christmas as looking to use in conjunction with losing a few kilos ;0)
    Recipe and timings were perfect, added some mushrooms which tasted yum..Just added all the bits in a freezer bag, gave them a nice shake up and left for 5-10mins.
    Think this could be a regular dish, low calorie, healthy, 15mins cooking time and with a parchment insert minimal clean-up.
    Love it !!!

    Will the addition of parchment paper interfere with the crispness of the final product?

      I actually wouldn't say the vegetables get super crisp here. It's tomatoes, bell peppers, etc. They get roasted, but not actually crispy. I hope that helps!

    I am making this this evening, but I am going to eliminate the salt since I am on a low sodium diet, I will just add a little more spices YUM!!!

      Yes! You will typically need LESS time to cook frozen veggies than fresh, so you may want to reduce the cooking time by a few minutes and check frequently for doneness.

    I add sweet potato cut into small chunks as it softens easily and is healthy. I add some garlic too and try and put as many veg in as possible as the new recommendations are to eat 30 plants a week for our health, including herbs and spices. I cook wholemeal pasta and coat it chilli pesto, then top with some grated cheeses. It’s one of our favourite dishes.
