Air fryer tomatoes and onions are a flavorful addition to any meal. The tomatoes and onions get perfectly roasted in the air fryer. This is a recipe that is easy to customize with different seasonings and spices.
Aren't roasted vegetables the best? I just love how it brings out the natural sweetness in the vegetables. But of course, the oven can take forever. So I love doing it in my air fryer instead!
These air fryer tomatoes and onions get all caramelized and it really brings out their natural sweetness.
This is ones of those recipes that I love making as a side dish or adding to a grain bowl.
And if you want to make it fancy, top with your favorite fresh herbs and top with some feta or freshly shaved or grated parmesan cheese.
Ingredients
- Roma or campari tomatoes
- Red onion
- Olive oil
- Dried oregano or Italian seasoning
- Salt
- Red pepper flakes (optional)
- Fresh herbs (for serving)
How to customize
This recipe is so easy to customize!
Swap out the herbs - Not a fan of oregano or Italian seasoning? Use thyme, parsley, or tarragon instead.
Make it spicy - While you can spice it up with red pepper flakes, you could also add some harissa sauce or calabrian chili paste (I love the Trader Joe's Bomba Sauce version).
Add more vegetables! - Why stick to just tomatoes and onions? Add zucchini and peppers, like we did in our recipe for Air Fryer Mediterranean Vegetables.
Use a different variety of tomato - Don't have roma or campari tomatoes? Use cherry tomatoes or grape tomatoes instead.
What to serve with the tomatoes and onions
The air fried tomatoes and onions can be served on top of a salad, in a grain bowl, or simply as a side dish.
I love serving them alongside air fryer panko chicken, air fryer panko cod, air fryer Mediterranean salmon, or air fryer pesto salmon.
I also love them paired with some air fryer pesto potatoes, air fryer baby potatoes, air fryer leeks, air fryer corn on the cob, air fryer cheesy garlic bread or air fryer pesto garlic bread.

- All air fryers cook differently. Check frequently to make sure tomatoes and onions are done to your specific liking.
- I love to use air fryer parchment paper for easier cleanup (and I find it's easier to scoop up the tomatoes and onions), but it's absolutely up to you!
How to make air fryer tomatoes and onions
Dice your tomatoes and red onion into 1 inch chunks and add to a large bowl.
Add olive oil, oregano, salt, and a pinch of red pepper flakes (optional) to the bowl.
Stir gently to combine. It's okay for the red onion pieces to get separated.
Add the tomatoes and onions to air fryer basket. (As noted, I love to use air fryer parchment paper for easier cleanup!)
Air fry at 400 degrees F for 12 minutes, tossing halfway through cooking time.
Plate, then add fresh herbs if desired!

Air Fryer Tomatoes and Onions

Ingredients
- 2 roma tomatoes
- ½ red onion
- 1 Tablespoon olive oil
- ½ teaspoon dried oregano or Italian seasoning
- ¼ teaspoon salt
- red pepper flakes optional
Instructions
- Slice a red onion in half and remove the skin. Dice the onion into 1 inch pieces, leaving layers together. Dice the tomatoes into 1 inch pieces.
- Add the diced tomato and onion to a bowl. Add the olive oil, oregano, salt, and red pepper flakes (optional) to the bowl. Stir to combine.
- Add tomatoes and onions to air fryer basket. Cook for 12 minutes at 400 degrees F, tossing halfway through cooking.
- Plate, and top with any fresh herbs if desired.
Notes
- Don't worry if the red onion layers slightly separate while tossing with the oil and seasonings.
