Passionfruit Chia Pudding

Passionfruit chia pudding is a deliciously tart breakfast or snack. This chia pudding makes me excited for breakfast the next morning.

I've started to love making chia puddings. They are so quick, so easy, and delicious. The only problem is that they are not ready immediately. But that's okay! I can make one in the afternoon or evening and have breakfast ready the next day. And that's pretty awesome.

The chia seeds need to "bloom" in liquid to get that thick consistency of pudding. So for at least 3 hours, but I always have the best results if I leave it overnight. Then I wake up in the morning to a delicious treat that just needs a couple of toppings. So easy.

I've been making this passionfruit chia pudding on repeat because the flavors are just out of this world. The passionfruit adds a delicious tartness and a slight sweetness. I amp up the sweetness a little more by drizzling some honey over the top, but you could use maple syrup or agave if you prefer.

Ingredients

  • Milk - I used almond milk here, but you could use regular milk, soy milk, oat milk, or even coconut milk for delicious tropical vibes.
  • Chia seeds - This is what thickens the pudding! I love chia seeds so much.
  • Passionfruit - If you're making a single serving of the pudding, I find that one passionfruit is the perfect amount.
  • Honey - I like to drizzle a little honey on top for sweetness. However you could also use maple syrup, another sweetener, or simply leave off the sweetener if you prefer.

How to make passionfruit chia pudding

Add the milk and chia seeds to a glass or jar.

Stir until combined. If you have a jar, you can place the lid on and shake instead of stirring. After about 10 minutes, stir again to remove any clumps of chia seeds that are sticking together. Cover and place in the refrigerator and refrigerate overnight.

Scoop out the seeds and pulp inside and add to the top of the chia pudding. Drizzle a little honey over the top and enjoy!

How to customize

The passionfruit chia seed pudding can be customized in a lot of ways. As I mentioned, I add honey to mine for a touch of sweetness, but you can use whatever sweetener you like or leave it out. You could also add vanilla extract if you would like, but I usually don't for this chia pudding.

And get creative with the toppings! You could add shaved coconut, granola, or chopped nuts. Those are just a few ideas.

Recipe notes

  • Sometimes I will just leave the passionfruit mixture on top of the pudding and enjoy that way. Other times, I'll mix it all together to incorporate before eating. Both are delicious!
  • Passionfruit are ripe when the skin is all wrinkly. That's when you want to grab one and use them!
  • I like a thick chia pudding. However, if you like yours thinner, simply use ⅔ cup milk instead of ½ cup milk.
  • This recipe serves one, but you can easily double, triple, or quadruple to serve more or to meal prep for the week. Chia pudding is good in the refrigerator for 5 days, so you can meal prep if you want in advance.

Ingredients
  

  • ½ cup almond milk
  • 2 Tablespoons chia seeds
  • 1 passionfruit
  • 1 teaspoon honey

Instructions
 

  • Add the chia seeds and almond milk to a glass or jar. Stir together to combine. After 10 minutes, stir again to remove any clumps of chia seeds and then cover and place in the refrigerator.
  • Refrigerate overnight for at least 8 hours to allow the chia seeds to bloom and thicken the pudding.
  • Remove from the refrigerator. Cut a passionfruit in half and scoop the seeds onto the chia pudding. Drizzle honey over the top, and then enjoy!
