Air fryer baby potatoes get perfectly roasted. Cooking little baby potatoes in the air fryer makes a perfect side dish to meals.

Air fried baby potatoes with parsley

There are just certain things I love making in the air fryer. And potatoes are one of those things. Lately, I've been making these air fryer roasted baby potatoes (aka air fryer mini potatoes). And they are such a treat. The outside gets all roasted to perfection while the inside is light and fluffy.

So good. My husband couldn't stop saying how perfect they were. Now that's a ringing endorsement in my book. He said the seasoning was perfect and the texture was perfect. Yay! But.. if you're looking to add some different flavors, I have a few suggestions below too!

Ingredients

  • Baby potatoes - very small potatoes, about 1 to 1.5 inches big
  • Olive oil
  • Salt
  • Pepper

How to make air fryer baby potatoes

Wash and dry the baby potatoes.

Potatoes on a paper towel.

Add baby potatoes to a large bowl and then add olive oil, salt, and pepper. Stir to combine to coat the baby potatoes in the olive oil and seasonings.

Air fry for 20-25 minutes at 400 degrees F (200 degrees C). Toss halfway through cooking.

Plate and serve with chopped herbs and your favorite dipping sauce (if you want)!

Recipe notes

  • If your potatoes are larger, they may need a longer cooking time. I try to pierce the largest potato to make sure it's done.
  • All air fryers cook differently. Adjust as needed.

How to customize the air fryer mini potatoes

These air fryer mini potatoes are so easy to customize! While I love them as is, you can add various herbs and spices to season them.

I love the idea of adding some onion or garlic powder for additional flavor, and a favorite of mine is smoked paprika. You could also add some ground harissa seasoning, chili powder, or even some curry powder.

You can also top the air fryer little potatoes with a sauce or with some sautéed garlic.

Quick, easy, and delicious! It was the perfect side to go with steak and broccoli. We drizzled them with pesto vinaigrette. I'll be making these a lot, thanks!
